South Sudan Recipes

Goraasa

Ingredients
500g (1lb 2oz) of wheat flour
1/2 tsp baking powder
500ml (a little over 2 cups) water
1 tsp salt

Directions
Sift flour into bowl.  Add baking powder and salt and stir in water until it turns into a thick batter.  Pour a ladle-full of batter onto non-stick flat frying pan and spread it out evenly.  Fry at medium heat and flip when golden on one side.

Kissa (I didn't make this one)

Ingredients
3 cups rye flour
1 cup wheat flour

Directions
At least one day before cooking, mix rye flour with water, adding water slowly until it turns into a thick paste.  If you want a more sour Kissra, add only a small amount of wheat flour.  For less sour Kissra, add more wheat - about 1:3 ratio with rye flour.  Keep covered overnight. 

Stir in water until thin.

Put a little oil on a sarge (flat surface for frying, i.e. frying pan) and place a small blob of mixture on the pan.  Spread thin.  Fry until the edges start to lift.  Peal off and stack the cooked Kissra.

Beef with Spinach

Serves approximately 8

Ingredients
2 onions - chopped
700g diced beef
1 tablespoon oil
water
2 teaspoons salt
3 small tomatoes - roughly chopped
6 bunches of English spinach - finely shredded
750g peanut butter (2 jars)
2 teaspoons beef stock powder (optional)

Directions
1. Wash meat under hot water.
2. Cook chopped onions until golden.
3. Add beef, salt and enough water to cover.
4. When water has decreased by two thirds add tomatoes.
4. Cook spinach and squeeze out any excess water.
5. Add meat mixture to spinach and stir.
6. Add peanut butter.
7. When oil comes to the top it is ready.

Eggplant

Serves 8-12

Ingredients
8 eggplants (approximately - it will depend on how much water the eggplant is holding as to how many you will need) - peeled and sliced
1 red or green capsicum - finely diced
3 carrots - finely diced
2 onions - finely diced
1 tablespoon oil
2 teaspoons salt
1 1/2 tablespoons tomato paste
250g peanut butter
3 tablespoons water (approximately) Season All garlic (to taste)
1 tablespoon lemon juice (to taste)
2 heaped teaspoons cumin 1/2 teaspoon black pepper

Directions
1. Boil eggplant until soft, mash.
2. Add peanut butter and mix well.
3. Cook onion, carrot, capsicum in oil until soft.
4. Add salt, tomato paste, water, Season All garlic.
5. Add eggplant mixture.
6. Add lemon juice, cumin and black pepper. Stir well.
7. Cook on very low heat until eggplant is no longer chewy. Keep stirring as this dish can burn very easily.
